XYGALO FROM SITIA

Xygalo Sitias is a cheese product, from goat and sheep or just goat milk, with white color, without shape, with a creamy and/or granular texture, and a cool, sour, slightly salty taste and pleasant characteristic aroma. It is a magnificent traditional delicacy, which has been recognized and recommended by many Greek and foreign gastronomy experts. Specifically, Elias Mamalakis describes Xygalo from Sitia as “a creamy cheese made exclusively in Sitia, with a rich taste, sour and fresh”. It is served as an appetizer, but can also accompany many other dishes, such as dolma, stuffed peppers and tomatoes, french fries, dakos, etc. It is known to be good for digestion, as its microflora strengthens the human body.
