SMOKED TALAGANI LOAF

TALAGANI* is a handmade traditional grilled cheese, produced exclusively from sheep milk. It is ideal for grilling, but can also be cooked in many creative ways. Due to its composition, when grilled or in a non-stick pan, it retains its intense full flavor, rich aromas and subtle touches of mint. Its most impressive feature is that it does not melt, but acquires a chewy texture without losing its shape. It is cooked easily and quickly and can be enjoyed either on its own, as an excellent meze for wine, ouzo and tsipouro, or in salads, snacks and as an ingredient in many recipes. Smoked Talagani has all the features of its classic form with the added advantage of its smoky rich taste. For those looking for a more intense tasting experience… The cheese is placed on the grill and is smoked for about seven hours in a natural way on beech leaves, acquiring a rich brown color and the grill imprints on its surface. Talagani has its own special character that has given it 3 awards in national and international competitions, while it is preferred by famous chefs and restaurants throughout Greece. *It took its name from the traditional, winter cape of the shepherds, the talagani.
