Mastelo® is one of Chios’ most famous products. Those who love it are persistently looking for it under the name ‘mastelo’, but this cow cheese officially belongs to the category of soft cheeses. Mastelo® is made of cow milk and is widely popular. It can be consumed as such, but is also delicious when grilled. That is why there is no visitor in Chios who has not tasted the famous grilled Mastelo. Due to its composition, the cheese when grilled, evokes the milky taste that characterizes it. Its most impressive feature is that it does not melt, but acquires a chewy texture without losing its shape. It is grilled easily and quickly on a grill or non-stick pan. Mastelo® is the brand name of the cheese (first made in 1994 by K. Toumazos in Chios) and not its type.
