After collecting the cream and maturing it, we are heating it on low heat and add a little barley flour. By heating, the fats are separated from the solid substance of the cream, which together with the barley flour gives a thick mixture. Staka and Stakovoutyro. Stakovoutyro is then placed in liquid form in glass jars and then in the refrigerator. It is used in confectionery and cooking. Stakovoutyro is the only 100% butter with 100% fat. Although it is rich in calories and fat, it can be used in many ways. It smells more intense than other animal butters, but its scent is distinctive and pleasant. A small spoonful of it makes our roasts and pasta unique, and is irreplaceable in the Cretan pilaf, the so-called wedding pilaf.
